Baked fillet of Scottish turbot; white bean cassoulet; red wine poached salsify; carrot and cumin puree with a vanilla and shellfish essence: "Another very aesthetically pleasing dish with interesting colour combinations. The fish was resting on a layered bed of salsify. The carrot and cumin puree looked glossy-smooth and was artistically arranged next to the cassoulet." "The turbot tasted very fresh and had been perfectly cooked (as it had not lost any of it's flavour from overcooking). The flesh was firm yet delicately flaky. Absolutely delicious." "A dish requiring precision timing and a great deal of skill in preparation."
