    The Skerries Restaurant, brings a flavour of our own original home of Orkney to the city of Edinburgh, as well as the freshest seafood and fish, finest Scottish meats and seasonal game.

    Skerries Restaurant is at the heart of the service we provide at The Dunstane. We have recently refurbished the bar and restaurant area with a view to further improving the standard of service, food and surroundings that we provide. We have achieved this with the redecoration of the bar and restaurant in 2012 and the appointment of new Head Chef Paul Hood and his team. We have been lucky enough to be finalists at the recent Scottish Hotel Awards for our restaurant and we are holders of a Taste of Scotland Award from Visit Scotland.


    Paul personally sources the best of Orkney’s seafood, fish and meat to complement the freshest local Scottish produce inspired by the owner's Orcadian heritage and commitment to our vast local Scottish larder. Our Orkney connection is very important to us and we believe this stands us apart from our competitors in terms of unique offerings on our menus and our historical connections with the Island. On our new menu that changes frequently to reflect Paul's constant selection of the best products on offer from our suppliers you will find Blue Shell Sheltand Mussels, a trio of Isle of Arran Salmons and selected prime cuts of Orkney beef. Our home-made desserts are a treat not to be missed.


    Paul's commitment to Skerries goes beyond that which we would expect. He is committed to quality control and checking that his team are keeping to his standards and specifications. He has regular meetings with suppliers, existing and potential, to ensure that he is sourcing the top ingredients for the menus and getting the best mix of produce. When it comes to customer service from his side, he is not adverse to personally explaining dishes and methods to inquisitive guests and industry colleagues alike. Get two chefs together and there is no stopping them!


    Our delicious menus are enhanced our offerings from the Stane Bar. We have hand selected wines chosen by the Owner and Manager for their quality and individuality. Our bar, also newly refurbished, has over 70 malt whiskys including the Orkney favourites – Highland Park and Scapa which we personally recommend and encourage our guests to sample. We keep large selection of personally chosen wines and beers from local microbrewers such as Orkney Ales from the award winning Atlas Brewery and our new edition of a selection of Loch Fyne Ales. We have recently expanded our Scottish Ales selection to include a couple from The Lerwick Brewery, Shetland which we are very excited to be promoting.
