Saddle of Dunvegan Venison, Parsnip, Onion Marmalade, Baby Spinach, Carrots, Sloe Jus: "The presentation of the venison showed meticulous attention to detail. The three thick medallions of beautifully pink meat were seated on top of a long bed of onion marmalade topped by bright green baby spinach, with the vegetables artfully arranged in different geometric shapes around the plate, itself decorated with puree and the sloe jus." "All the elements of this dish were of excellent quality, handled with great skill to produce a delicious blend of colours, flavours and textures."
