Indulge in the magic of chocolate making and learn how to impress friendsAt 19 years old, artisan chocolatier Finlay MacDonald is cooking up a storm in Glenshiel. His company, Chocolates of Glenshiel, is growing from strength to strength.Award-winning Finlay, whose first venture into the food industry began with breadmaking at the age of 12, said: I got the opportunity to do some work experience in a pastry kitchen. I discovered that the chef I was working with was leaving to set up a chocolate shop so I asked if I could come back to learn how to make chocolates.I spent the next day making chocolates and loved it. I then took what I had learned and, using the money I had made from selling bread, bought the basic equipment I needed to make my own chocolates.In 2016 Finlay decided to up his game from making generic chocolates to personally crafted artisan creations using fresh, local ingredients. From his kitchen on the shores of Loch Duich, Finlay produces a range of sumptuous chocolates available online, which are flavoured with produce from the Isle of Skye - Talisker whisky, Misty Isle gin and sea salt - as well as produce from Blairgowrie and marmalade from Dundee.He said: I saw all the wonderful small Highland enterprises that surrounded the area and felt compelled to showcase the fantastic produce they had to offer, in my chocolates. I set out to create flavours such as my Isle of Skye Sea Salted Caramel and my Heather Honey and Raspberry, made with honey and raspberries from Blairgowrie.Finlays awards:2016 Young Scot of the Year2018 Young Ambassador of the Year, Highlands Islands Food Drink Awards.In this demonstration, Finlay will showcase some of the secrets to creating his award-winning sweets.
