Inver is a personal project from chef Pamela Brunton and restaurant manager Rob Latimer. Using current cooking techniques and the very best local, wild and farmed ingredients we offer a contemporary take on traditional and forgotten Scottish dishes. Lunchtime sees simply prepared fresh shellfish from the loch outside, hot soups and open sandwiches, local meat and game in season. Dinner is an award-winning fixed, four course menu, as well as a short, classic bar menu. We bake our own sourdough bread, churn our own butter, do butchery and charcuterie, ferments, preserves and ice-creams in house.
There is a short cocktail menu because Rob likes good drink, with a gin and tonic featuring his own tonic syrup and unusual house-made soft drinks like damson shrub (with our own apple vinegar), rhubarb barley water and naturally fermented elderflower soda. We serve Scottish craft beer; organic and naturally produced wines from small independent producers in Europe and England; and our own blend of coffee is roasted in an Argyll garage. There are records playing in the dining room, Pam's cook book collection on the shelves and books of poetry by the fire. The small bar, recently renovated, is decorated with the owner's own collection of art and illustration.

Both Rob and Pam have recently spent time at restaurants Noma (Copenhagen), Faviken (Sweden), and In De Wulf (Belgium). Pam's 12-year career in kitchens includes Michelin-starred and 'World's 50 Best' restaurants in London and France. The couple met in London, where they spent ten years; Rob was formerly an animation director working for Bafta-award winning studios in the city. The new restaurant Inver is the realisation of our long-held ambition to bring our world class skills home to Scotland.
