Number One, Edinburgh’s culinary landmark, is The Balmoral’s Michelin-starred fine dining restaurant. Executive Chef, Jeff Bland, and Head Chef Brian Grigor place an emphasis on creative dishes whilst promoting the best of Scotland by using only the finest and freshest Scottish ingredients. Jeff Bland started at The Balmoral shortly after Sir Rocco purchased the hotel in 1997. Jeff is dedicated to promoting the best of Scotland’s natural larder and has spent the last 15 years sourcing the best suppliers throughout Scotland. Brian Grigor oversees the award-winning kitchen at Number One which features dishes such as Borders roe deer with rainbow chard, hazelnuts and pistachio; fillet of Blairgowrie beef with pearl barley, tenderstem broccoli and bordelaise and Scottish crab with heirloom tomatoes, black olives and basil.
Number One is also dedicated to providing the highest levels of service. For 17 years, Restaurant Director Gary Quinn has overseen the front of house operations at Number One. Together with Assistant Manager Emma Lonie, Gary ensures diners at Number One receive the very best service.
Number One was awarded its Michelin star for 2016 for the 14th consecutive year. The restaurant received a £200,000 refurbishment in January 2015. Restaurant Director, Gary Quinn, was named Restaurant Manager of the year at the 2015 Scottish Hotel Awards.
