Hi! I'm Shetland chef, Akshay Borges. I have been cooking and working with local produce and producers in Shetland for more than 15 years. This year I will be welcoming groups of 6-10 guests into my home for Shetland's first private dining space - I hope you can join us! I will be cooking the best local, kitchen-garden and wild foraged produce with a special focus on freshly-caught seafood.
