The tea seed (Camellia Sinensis) was planted in January 2016 and we are experimenting with leaf while the bushes mature, this may take 4 years. However we are using this time to study and learn about organic tea production methods and to find the best flavours and decide which type of tea our leaf is best suited to. As a family we are passionate about green tea, we love Japanese matcha, black tea, white tea and Oolong. We are learning tasting and experimenting with tea consultant Beverly Waignwright, and drawing on resources from around world.
