Surprisingly, Fife had a whisky industry for many centuries but over the years the the Scotch distilleries all disappeared. However, recently, whisky distilling has made a come back with 4 new distilleries opening since 2005. The first of those, ‘Daftmill’, located near Cupar, Fife, produce a lowland single malt, but as it is also a working farm, is not generally open to the public. The other 3 were opened between 2012 and 2017 but as Scotch Whisky must be aged at least 3 years in oak vats it is not an instant product and patience is required to taste the finished article. Kingsbarns Distillery, near St. Andrews, Fife, the home of golf , is built on the site of a derelict 18th. century farm steading and opened in 2014. It is now producing a single malt whisky from their stills with others to follow. The distillery was originally the brain child of a former golf caddie Douglas Clement, who sold the business to the Wemyss family whose ancestor, the 7th Earl, owned the site in the 18th. century.  The distillery has a shop and licensed café and welcomes visitors for tours and tastings. The Eden Mill distillery and brewery in St. Andrews, Fife opened in 2012 and has been producing whisky, gin and a range of beers since. The town previously boasted several distillers, including one owned by the famous Haig Brothers. Currently their site is being re-developed and a visit is not possible. The most recent addition to whisky production in Fife and one which has an ancient connection to it is the Lindores Abbey distillery which opened in 2017 directly opposite the now ruined abbey of the same name. The abbey was founded as a ‘daughter abbey’ to Kelso Abbey in 1191 and the earliest record of Scotch Whisky or aqua vitae (water of life as it was known then) is 1494 when a batch  of about 1,275 lbs of was ordered from Friar Jon Cor of Lindores Abbey by King James IV.  Still too early to sample their Scotch, the distillery currently produces its own version of Aqua Vitae which uses locally sourced herbs and spices.
